Chicken Parmesan
Ingredients:
Chicken
3 lbs Boneless Skinless Breast (cleaned, washed and split)
1 cup Italian Breadcrumbs
1 cup Grated Parmesan Cheese
2 tsp Italian Seasoning
2 cups Mozzarella Cheese
1 box Spaghetti Noodles
2 tsp Parsley Flakes
Sauce
1 jar Spaghetti or Marinara Sauce
1 tsp Oregano
1 tsp Chili Powder
1 tsp Sugar
Directions:
Preheat the oven to 400 degrees F. Prepare a shallow 13×9 baking dish with cooking spray and set aside. In a medium bowl, stir in parmesan cheese, parsley flakes, Italian seasoning and breadcrumbs until combined. Dredge each piece of chicken through the parmesan and breadcrumb mixture until coated on both sides and lay in the baking pan a single layer. Bake in preheated oven for 45 minutes or until golden brown. Remove from oven, spoon a portion of the marinara sauce over and around the cutlets. Sprinkle 1 teaspoon of the mozzarella over each cutlet and bake about 3 to 5 minutes until cheese melts.
Sauce (Prepare while chicken is baking.)
In medium skillet, add sauce, oregano, chili powder, Italian seasoning, sugar, stir until all ingredients are combined. Bring to boil on medium to high heat, reduce heat and simmer for 15 minutes before adding to chicken. This dish can be served with noodles, prepared as directed on the package.
