Guanciale is a cured Italian meat made from the cheek of a pig. My friend from Italy says no part of a pig is ever wasted. Prepared right, it’s a richly flavored meat. For this dish you could substitute bacon, prosciutto, ham, or any other boldly flavored meat you like. Sausage or salami might work well. I used Romano cheese, but you can use Parmesan. This is a simple dish made mostly with simple ingredients.
