Make these great pancakes gluten free for a breakfast stack with vanilla syrup or make them for filled pancakes savory or sweet.
Recipe,
for 4 people breakfast stack.
2 cups of chesnut flour ( or other gluten free flour like plaintain)
1 teaspoon of bicarb of soda
1 egg
cup of milk
mix up together till lump free, mix lightly dont over mix because you knock all the air out. should be the consistancy of pouring cream.
prepare a nonstick pan of medium heat, the first one is the temperature test. once bubbles appear all over surface flip over. continue.
my vanilla syrup ,
boil up 1 cup of demarera sugar ot any brown sugar, and 1/4 cup water , till it foams, stiring to disove suugar, when smooth pull off hear and once a littel coller add 2 tsp vanilla essence or pod. serve in a small jug to pour over pancakes. enjoy.
