Cookingconspiracy presents an Italian classic. Best part about it, is it is extremely easy. Simple enough for a week night but still impressive none the less. Directions are given in english. This dish is made up of pasta, egg, guanciale (bacon/panchetta can substitue) and parmesan/pecorino cheese. so that’s 5 ingredients if you dont count pepper, water and salt for the water which I usually do not.
Ingredients for 2
200 g of spaghetti
150g of guanciale
1/2 cup parmesan or pecorino
2 eggs
Method
This creamy pasta dish comes together quickly and if you do it right it will have an authentic taste. So start your water boiling with salted water. When your water is boiling you fry your guanciale in a deep skillet. As your guanciale and pasta is cooking make your sauce. whisk two eggs and stir in your parmesan and a couple shakes of pepper. Now your guanciale should be done about the same time your pasta is al dente. turn off the heat and combine them along with a little bit of the pasta water. combine pasta and the guanciale and stir around. Allow to cool for a couple of minutes then stir in your sauce. It should be hot enough that the pasta cooks the sauce and sticks but not so hot that you make scrambled eggs. Top with parmesan and serve.
