– 3 lb chuck roast
– rub : dried basil, oregano, onion salt, garlic salt, crushed red pepper, salt and pepper
– beef broth
– garlic
– Giardiniera
– pepperoncini
– 1/2 stick of butter
– steak or French bread

Cooking instructions
– combine rub ingredients
– rub chuck roast
– set smoker at 225 degrees. Add roast to the smoker for 2 hours
– after two hours put roast in a aluminum pan. Add broth, garlic, giardiniera, pepperoncini, and half stick of butter to the pan. Cover with aluminum foil.
– set smoker to 275 degrees and put the aluminum pan in there for 3 additional hours.
– pull meat and add to sandwich! I broiled provel cheese on the bread and added more giardiniera peppers to the sandwich!
