This video I show you two very simple and delicious meal-prep lunch recipes! Full recipes and steps below!

Fiesta Chicken
Ingredients:
1 – 2 lbs. chicken breast (tenderloins or thighs are okay too)
1 can black beans
2 cans Rotel tomatoes (I use one mild and one regular)
1 can corn
1 package or 1 tbsp. Mexican style seasoning (chili powder, paprika, etc.)
1 packet or ~1 tbsp. ranch dressing mix
Salt & pepper
1 package cream cheese
1 cup rice (uncooked)
Steps:
1. Spray large crockpot with cooking spray
2. Add in chicken, drained black beans, tomatoes, corn, and seasonings
3. Cook at high for 2 ½ – 4 hours (until chicken it fully cooked)
4. Once chicken is done, shred chicken and add it back to crockpot
5. Add in cream cheese and cook on high for 10 – 15 minutes until cream cheese has softened and is able to mix in with other ingredients
6. Cook rice as package instructions
7. Serve by adding rice into crockpot or serve crockpot mixture over rice
*I separated this into 4 servings, but the servings were too large for lunch so unless you want a very large meal I would recommend splitting this into 5 servings!
Chopped Italian Salad
Ingredients:
(Salad)
1 cup macaroni pasta (or any other small-sized pasta)
~3 cups chopped romaine
1 link summer sausage
1 cup cheese of choice (mozzarella or provolone)
1 cup artichoke hearts
1 small can sliced black olives
1/2 cup green onions
(Dressing)*
1/3 cup apple cider or red wine vinegar
1/3 cup olive oil
½ tbsp. Dijon mustard
1 tbsps. honey
1 cloves minced garlic
1 – 2 tsp. Italian seasoning (oregano, parsley, etc.)
Salt & pepper
I altered this slightly than what is shown in the video because the original recipe I show made entirely too much dressing.
Steps
1. Cook pasta according to package instructions and let cool
2. Chop all salad ingredients to desired size and add into large bowl with cooled pasta; mix to combine and divide into individual containers (4 – 5)
3. Combine all dressing ingredients into small bowl and store in separate container from salad until ready to serve
