In this recipe I am going to show you how to skillfully blend almonds, capers, tomatoes and basil to create a hell of a creamy sauce which will marry a generous portion of spaghetti. You will crave for more – that’s for sure – and that’s why I love this pesto recipe.

Pasta with special pesto – RECIPE

Prep Time: 5 mins
Cook Time: 10 mins
Complexity: Easy

Ingredients (4 people):

400 gr spaghetti
70 gr capers
60 gr Pecorino (or Ricotta Salata if you have access to)
10 cherry tomatoes
70 gr almonds
zest of 1 lemon
basil leaves
oil
pepper

Procedure:

1) Well… Kind of simple steps! Blend all the ingredients together with a mixer (or use a pestle&mortar if you’re feeling adventurous)
2) In a bowl, mix the pesto cream and the pasta. Add water from the pasta cooking if required;
3) Serve immediately sprinkling some lemon zest and black pepper on top!
4) ENJOY!

ITALIAN FOOD BOSS SPECIAL TIP: Pasta MUST be ‘al dente’ and there is no need of cooking pesto sauce and pasta together!
