In this video I show you how to make classic shrimp scampi. Shrimp sauteed in a spicy garlic onion wine sauce and served over a plate of linguine.

Shopping List:
1 lb. linguine
4 tbs. butter
4 tbs. extra virgin olive oil
2 tbs. finely diced onion or shallots
2 cloves finely minced garlic
Pinch of red pepper flakes
1 lb. small raw shrimp 60/80. Peeled, de-veined, tail off
Salt and Pepper
1/4 cup kosher salt for the pasta water (use 1/2 that much if using table salt)
1/2 cup white wine or chicken broth
Juice of 1 lemon
1/4 cup finely chopped Italian flat leaf parsley
Parmesan cheese and lemon slices for garnish

Directions:
Bring a pot of water to a boil, add the salt and add the linguine. Cook 1 minute less than package directions. Cooking time will be about 11 minutes, about the time it takes to cook the shrimp and sauce.
Add 1/2 the butter and 1/2 of the oil to a skillet over medium high heat then add the onions, red pepper flakes and saute for about 3-4 minutes. Add the garlic during the last minute.
Season the shrimp with salt and pepper and add them to the pan and cook until pink, about 2-3 minutes. Remove from the pan and keep warm.
Add the wine or broth, lemon juice, 2 tbs butter and 2 tbs oil to the pan and bring to a boil. Cook 2-3 minutes til the wine reduces by 1/2 then add the shrimp along with the parsley. Salt to taste and serve over the cooked and drained pasta with a drizzle of olive oil.
Garnish with parmesan cheese and lemon slices.
