Born in Australia, at the beginning of the 20th century, but the origins are not very clear. There are some references that connect Lamington cake with Lord Lamington a former Governor of Queensland.
The cake is based on a vanilla sponge cake, covered with chocolate and dried coconut cakes. Many versions include a layer of fruit jam between the two sponge cake halves.
If you are curious to taste this delicious Australian cake, let me tell you that is very easy to make and you can store it in the fridge for up to 3 days. Ore store it in the freezer for a couple of weeks.

Sponge Cake:

3 eggs
sugar 90g.
flour 90g.
a pinch of salt
vanilla extract 1/2 teaspoon
apricot jam 130g.
milk 125ml.
dark chocolate 125g.
dried coconut flakes 150g.

Instructions:

1. Mix the eggs with the sugar and a pinch of salt until they double the volume. Add vanilla extract and continue to mix until you obtain a foamy and smooth texture (as in the video).
2. Sift the flour and add half of the quantity. Whisk gently. Then add the rest of the flour. Just pay attention not to overmix.
3. Pour it into a cake tray and bake for 20 minutes at 170°C, in the preheated oven.
4. Once ready, leave to cool down completely.
5. Meanwhile, put to boil the milk, but once the milk reaches a high temperature (but not boiling), decrease the heat and add the chocolate. Continue to mix until you get a medium dense texture.
6. Pour the chocolate into a clean bowl and let to cool down.
7. Cut the sponge cake into half and spread apricot jam. Then cover with the other half of the cake and cut small cake cubes.
8. Cover the cakes with chocolate then sprinkle dried coconut flakes.
9. Put the lamington cake in the freezer for 10 minutes, then in the fridge, using a lidded storage box.

The lamington cakes will taste perfect the next day when the sponge cake will be softer and the chocolate will be set.
