🍋 Sometimes, delicious desserts don’t have to look like a dessert from a high-end bakery. And these lemon bars are exactly like that!
I will show you how to make these absolutely delicious and crumbly lemon bars, with just a few and simple ingredients.

Ingredients:

Cookie base:

flour 150g.
icing sugar 50g.
cold butter 90g.
(optional) water 1 tablespoon

Lemon cream:

2 eggs
sugar 175g.
bicarbonate of soda 1/2 teaspoon
flour 1 tablespoon
zest of one lemon
juice of one lemon

Icing sugar

Instructions:

1. Using a food processor, mix the flour with the icing sugar, until the ingredients come together. If they still look dry, add a tablespoon of water.
2. Press the dough gently into a tin (I’ve used a 22x22cm tin) and let to rest in the freezer for 5 minutes.
3. Bake then for 15 minutes at 180°C, the preheated oven.
4. Meanwhile, whisk 2 eggs, then add gradually the sugar, until you get a foamy texture.
5. Add the bicarbonate of soda and flour.
6. Add the lemon zest and lemon juice and whisk.
7. Pour the mixture over the base and bake for 20 minutes at 160°C.
8. Leave to cool completely and dust some icing sugar.
