Delicious recipe for Cheese-Stuffed Italian Meatloaf that combines the savory flavors of seasoned meat with gooey melted cheese in the center. It’s a fun twist on the traditional meatloaf that’s sure to impress!

Ingredients:

For the Meatloaf:
1 lb ground beef (preferably 80/20)
1/2 lb ground pork
1/2 cup breadcrumbs (preferably Italian-style)
1/4 cup grated Parmesan cheese
2 eggs
1/2 cup milk
3 cloves garlic, minced
1/2 onion, finely chopped
1 tbsp dried oregano
1 tbsp dried basil
1 tsp dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped (optional, for garnish)
For the Cheese Filling:
1 1/2 cups shredded mozzarella cheese
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 tbsp fresh basil, chopped (or 1 tsp dried)
1/4 tsp garlic powder (optional, for extra flavor)
For the Glaze:
1/4 cup ketchup
2 tbsp balsamic vinegar (or red wine vinegar)
1 tbsp brown sugar
1 tsp Dijon mustard
1/2 tsp dried oregano (optional)
Instructions:
Preheat oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a 9×5 loaf pan.

Prepare the meat mixture:

In a large bowl, combine the ground beef and ground pork.
Add the breadcrumbs, Parmesan cheese, eggs, milk, garlic, onion, oregano, basil, thyme, salt, and pepper.
Mix everything together until well combined, but be careful not to overwork the meat to keep it tender.
Prepare the cheese filling:
In a separate bowl, mix together the mozzarella cheese, ricotta cheese, Parmesan, fresh basil, and garlic powder (if using).
Assemble the meatloaf:
On a large piece of plastic wrap or parchment paper, spread the meat mixture into a rectangular shape (about 9×12 inches).
Spoon the cheese mixture into the center of the meat, spreading it out evenly but leaving some space around the edges.
Carefully lift the sides of the meat to fold over the cheese, creating a log or loaf shape. Make sure the seams are sealed to prevent cheese from leaking out.
Glaze the meatloaf:
In a small bowl, whisk together the ketchup, balsamic vinegar, brown sugar, Dijon mustard, and oregano (if using).
Spread a thin layer of the glaze over the top and sides of the meatloaf.
Bake the meatloaf:
Place the meatloaf in the preheated oven and bake for about 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Halfway through baking, brush the meatloaf with more glaze for extra flavor.
Rest and Serve:
Once the meatloaf is done, remove it from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
Garnish with fresh parsley, if desired.
Serving Suggestion:
Serve your cheese-stuffed meatloaf with a side of roasted vegetables, mashed potatoes, or a simple green salad. A slice of garlic bread wouldn’t hurt either!
