As the weather starts to warm up, this is the one healthy potato recipe you need in your rotation. The first time I ever had a potato salad with mayonnaise was at a friend’s house, and his whole family was laughing at me because this is the potato salad I was used to.

Whether you eat it warm, cold, or the next day, it always tastes great. It’s a perfect Mediterranean diet dish on its own, but it’s also incredible with some tuna on top for a high-protein lunch, or served as a side to grilled meat, chicken, or fish. I like to make this potato salad and keep it in the refrigerator to pick at for a few days.

My grandmother made this all the time and she sometimes added green beans or any fresh vegetables from the garden. So if you’re tired of the normal potato salad with mayo and want an easy summer salad that actually tastes fresh, this Sicilian classic is for you.

Ingredients:
2 lbs Yukon Gold potatoes, cubed
12 oz Cherry tomatoes, halved
1 Red onion, thinly sliced
1/2 cup Mixed olives (Pitted)
2 tbsp Capers
1 oz White wine vinegar
1 oz Extra virgin olive oil
Fresh Basil & Dried Oregano
Salt & Black pepper

Directions:
1. Boil your cubed potatoes in salted water. Watch the clock! You want them tender but firm, around 15 minutes is the sweet spot so they don’t fall apart.
2. Add the potatoes to a large bowl and let them cool off for a few minutes.
3. Add in your red onion, tomatoes, olives, and capers.
4. Add in your salt, pepper, oregano, and fresh basil. Pour in the white wine vinegar and olive oil.
5. Give it a mix. The potatoes will soak up that vinegar and oil while they’re still warm.

  7. I have been making this for years, based on a potato salad I had at a restaurant. The only difference is the addition of parsley and red cabbage, and new potatoes (unpeeled) are used. The dressing in "my" version has garlic infused into the olive oil. I like it better than mayo based potato salad.

  9. Unrelated but a favor if possible please. Can you make Zabaione? It’s amazing how in nyc Italian restaurants barely make this anymore. Typically you order this dessert before you order the dinner. It was my favorite.

Its the start of BBQ season for my family and potato salad is a big deal. I HATE mayo tho, so depending on who makes it, I often skip. THIS tho is perfect – at least for me! I can swim in capers.
