This is a classic from Naples! 🇮🇹 Zucchine alla Scapece is the ultimate way to turn simple vegetables into a masterpiece. Crispy fried zucchini meets a fresh garlic, mint, and vinegar dressing.

My only advice… double the recipe and make sure you have plenty of bread for that sauce! 🥖

Save this zucchini recipe for your next Sunday dinner or summer BBQ!

Ingredients:
6 Zucchini (thinly sliced)
1 oz White Wine Vinegar
1 oz Extra Virgin Olive Oil
2 Garlic Cloves (minced)
Handful of Fresh Mint (chopped)
Salt to taste
Sunflower Oil (for frying)

Directions:
1. Use a mandoline for perfectly thin, uniform rounds.
2. Fry the zucchini in batches until golden and crispy.
3. Drain on paper towels and salt while hot.
4. Mix olive oil, vinegar, garlic, and mint in a jar. Shake until creamy.
5. Place zucchini in a dish and drizzle the dressing over the top.
6. Make sure you have some bread and enjoy it.

  1. That’s a lot of raw garlic! I would probably just cook the garlic for a minute. Looks good and I love zucchini! And thank you for sharing a vegan recipe!

  3. I keep confusing zucchini with cucumbers. Cannot wait to try this! Other recipes of this guy has been easy and delicious to make

  4. Fry it in olive oil. Seed oils are highly processed, deodorised, chlorinated, inflammatory. I fry my zucchini in not so deep olive oil and the garlic gets fried too. Red wine Balsamic vinegar goes well too. I'll try it with mint.

  5. I don't like the taste of mint, so I used Italian flat-leaf parsley instead. AMAZING on toasted, crusty bread. YUMMY!
