Today on our episode #435 of All in the Industry, Shari Bayer has a special โ€œOn the Roadโ€ show, which is the last part of our three episode series on Ein Prosit 2025 (https://www.einprosit.org/) , an extraordinary multi-day event that took place from October 15-20, 2025 in Udine, Italy, featuring some of the greatest Italian & worldwide chefs. This was Ein Prosit’s 26th edition, which included outstanding collaboration dinners, tastings, food trucks and more, bringing together the hospitality community.

Shari’s guests are Chef Patron Norbert Niederkofler (https://www.instagram.com/nniederkofler/) and Executive Chef Mauro Siega (https://www.instagram.com/mauro_siega/) of Atelier Moessmer Norbert Niederkofler (https://ateliernorbertniederkofler.com/en/) , a 3 Michelin star and green star restaurant, currently #20 on The Worldโ€™s 50 Best Restaurants (https://www.theworlds50best.com/the-list/atelier-moessmer-norbert-niederkofler.html) , located in the small town of Brunico, Italy, between the Alps and the Dolomites, where we recorded this interview after an outstanding lunch on their beautiful property.ย  As we discuss, Norbertโ€™s โ€˜cook the mountainโ€™ philosophy, using only hyper-local Tyrolean terroir ingredients, drives every aspect of the restaurantโ€™s sustainability-forward culinary narrative. He believes in inspiring the world with the spark of ethical cuisine, in order to change the way we eat, collaborate and live; and collaborates on this mission with his team, including Mauro, and Restaurant Manager and Wine Director Lukas Gerges.
