I usually fry the onions, tomato, green chilly, coriander leaves, salt and pepper then once the onions turn a golden brown, I add the egg to that and quickly add the bread. Then after simmering on low for 5 min I flip it and add the cheese but thin slices. Simmer for 5 min then take it off the stove.
I am watching from Weimar, Germany. I will serve this as a light evening meal but omit catsup and instead mozzarella use Gorgonzola and Camembert. Top it with a chiffonade of basil and a bit of cilantro ( my favorite herb). On the side lamb ear salad with vinegrette. Yum.
