  1. My recipe for caramelized onion alfredo pasta is…
    Ingredients
    .perciatelli noodles
    .1 yellow onion
    .3 tbsp olive oil
    .2 tbsp garlic
    .1 cup heavy cream
    .1/4 cup butter
    .salt & pepper to taste
    .italian seasoning & parsley
    .splash of pasta water

    Instructions
    .boil the pasta for 10 minutes or al dente then strain making sure to leave at least 1/4 cup pasta water for the sauce.
    .dice one whole yellow onion and sauté low and slow in 3 tsp of olive oil until golden brown
    .add a splash or water when onions stick to deglaze the pan
    .when the onions are golden brown add 2 tbsps of minced garlic and sauté until fragrant
    .add 1 cup of heavy cream, stir
    .add 1/4 cup of butter, stir
    .turn off your heat and add 1/2 cup of fresh grated parmesan and stir until smooth
    .add your seasonings & salt and pepper to taste
    .finally add your noodles into the sauce and stir well
    .add a splash or pasta water as needed to help thin the sauce
    .garnish with more grated parmesan and fresh parsley
