For a meal that feels like a warm hug but takes less than 20 minutes, Pasta al Limone with a twist of garlic and spinach is a perfect choice. It’s bright, silky, and deceptively simple.

The Ingredients
200g Spaghetti or Linguine

2 tbsp Extra virgin olive oil

2 cloves Garlic (thinly sliced)

1 Organic lemon (zest and juice)

50g Fresh baby spinach

30g Parmesan cheese (freshly grated)

1 tbsp Butter

Salt & Black pepper to taste

The Method
Boil the Pasta: Bring a large pot of heavily salted water to a boil. Cook your pasta until it is al dente (usually 1–2 minutes less than the package instructions). Important: Before draining, scoop out about one cup of starchy pasta water. This is the secret to a glossy sauce.

Infuse the Oil: While the pasta cooks, heat the olive oil in a large skillet over medium-low heat. Add the sliced garlic and a pinch of red chili flakes if you like heat. Sauté gently for 2 minutes until the garlic is fragrant and golden—do not let it brown.

Create the Emulsion: Add the lemon juice and a splash of the reserved pasta water to the skillet. Whisk in the butter until melted.

The Toss: Add the cooked pasta and the baby spinach directly into the skillet. Increase the heat to medium and toss vigorously. The spinach will wilt in the heat.

The Finish: Sprinkle in the Parmesan and lemon zest. Add more pasta water a tablespoon at a time until the sauce coats every strand perfectly.

To Serve
Plate immediately with an extra crack of black pepper and a final dusting of cheese. The acidity of the lemon cuts through the richness of the butter, making every bite feel light yet indulgent. Enjoy!
