๐งพ Ingredients (2 portions)
– Chicken breast: 1 large (300โ400g)
Marinade
– Light soy sauce: 2 tbsp
– Rice wine: 1 tbsp
– White pepper: ยฝ tsp
– Five spice (homemade): 1 tsp
Coating
– Potato starch: 150g
๐ณ Method
1) Flatten the chicken breast under plastic wrap using a rolling pin until even thickness throughout. Mix all marinade ingredients and massage into the chicken by hand. Cover and rest for 30 minutes minimum.
2) Press the marinated chicken firmly into potato starch, coating every surface completely.
3) First fry at 160ยฐC for 5โ6 minutes until cooked through. Remove and rest for 2 minutes. Second fry at 190ยฐC for 1โ2 minutes until the crust turns deep golden and shatters.
4) Immediately dust with dry spices while hot. Serve straight away.
