  1. Yuuuuuum I have tried scotch fillet, porterhouse steak but nothing beats chicken parmesan with pasta here in Perth the best chicken parmi is served at Leo's in the suburb of Maylands

  6. Why not Cento San Marzano tomatoes? Those are the actual tomatoes used in every major Italian sauce IN ITALLY. I use them for my sauce and I can't tell you just how amazing they are and packed with intense flavor. 👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣👣

I have to say this episode was different from the other episodes I enjoy your podcasts this one was very welcoming you cooking and telling your stories made me feel and I dont say this lightly it felt like I was in your kitchen. Top class act. I hope you can do more of them from time to time. God bless you and your family always. I grew up in Boston I miss it especially the great mom and pop italian restaurants. Im retired and living in Lima Peru they italian community here is pretty big people dont really know this.

  10. Use a brine for white meat chicken. Combine 50g salt with 1500g water (3% salt). Use a scale. The tastiest, juiciest, most tender chicken you've ever had. Brining works for most meat. Let it sit in the brine for at least 4 hrs, in the fridge. Don't beat the chicken with a hammer like a mamaluke, Mikey. Cheers.
