This is a spin on Catherine’s Scorsese’s Famous
meat sauce and it truly was delicious!
For meat sauce:
* 1/2 Ib. piece shank of veal, whole (I used beef short ribs since my local grocery store didn’t have veal shank, I also added 1/2 pound of cubed chuck)
* 1/2 Ib. pork sausage (I used a combo of spicy and sweet)
* Light Olive oil
* Medium onion, chopped small
* 5 large garlic cloves or more
* 6oz can tomato paste
* 1/2 cup red wine
* 2 28oz cans Italian style tomatoes
* Basil
* 1 large carrot (you fish out the basil and carrot before serving the sauce
For the meatballs:
* 1lb ground mixture of veal, beef and pork
* 1egg
* Grated locatelli and sardo cheese
* Fresh parsley
* Garlic salt (optional)
* Salt and finely ground pepper
* 2 Tbsp Tomato sauce
* Bread crumbs if needed for consistency
Sear the meat in a large pot in olive oil until a little brown. Put aside. Sauté onion and garlic cloves in the same pot until golden. Add tomato paste and red wine. Let them cook for about a minute or two. Add the two cans of tomatoes and mash them with the back of a spoon.
When sauce starts to bubble, add salt and pepper to taste and simmer for a while, stirring every now and then from the bottom up.
Add the meat and carrots. Cook covered on low for 3hours until meat comes apart with a fork. While that’s simmering mix meatball ingredients together and roll into egg-size balls. Put raw meatballs in the sauce-do not fry them. When meatballs float to the top of the sauce (don’t stir until they do), they should be done. (It’s takes about an 1-2hrs).
Simmer and stir a few more minutes.
Remove pieces of veal and pork, slice, and serve as a side dish with meatballs. Serve sauce over spaghetti or whatever pasta you want.
