  1. Super greens pasta salad

    Ingredients
    • 250-300 g short pasta (fusilli, penne, or rotini)
    • ⅓-½ cup Sun-dried tomatoes
    • ½ cup cucumber, diced
    • ¼ cup red onion, finely chopped
    • ½ cup Feta cheese (or Mozzarella)
    • 2-3 tbsp Olive oil or used oil from sundried tomatoes
    • 1 tbsp Lemon juice or Red wine vinegar
    • 1 tsp Dijon mustard (optional but good)
    . 3 up to 6 chicken thighs (optional)
    • Salt & black pepper
    • Optional: fresh Basil or Parsley

    1. Cook the pasta
    Boil in salted water until al dente. Drain and rinse briefly with cold water to cool.
    2. Make the dressing In a bowl, whisk:
    • olive oil or sundried tomatoes oil
    • lemon juice or vinegar
    • Dijon mustard
    • salt and pepper
    3. Mix the salad
    In a large bowl combine:
    • cooled pasta
    • sun-dried tomatoes
    • cucumber
    • red onion
    • feta or mozzarella
    4. Dress it
    Pour the dressing over and toss well.
    5. Finish
    Add chopped basil or parsley and adjust salt/pepper.
