Over the next 100 days, I’ll be sharing the intentional Mediterranean-inspired meals I prepare each day as I recalibrate my body and mind for a summer in Italy. But this isn’t just about my journey. No matter where you plan to spend your summer, we can do this together. One meal at a time. One day at a time. Progress — not perfection — as we step into the season lighter, stronger, and more aligned. I want to feel my best inside and out when I get on the plane to my Italian summer, and long awaited time with my daughter who lives, works and loves living in Florence and the Tuscan Country side!
1 cup red cabbage (shredded thin)
1 cup green cabbage (shredded thin)
1/4 cup raisins
1/4 chopped kalamata olives
2 hard boiled eggs slices
1/4 cup some diced cheese ( I like mozzarella but i did use colby jack today) my american twist
1 1/2 cup shredded roasted chicken
In a bowl combine all your ingredients, then make the delicious dressing!
Dressing: 1/2 cup healthy mayo. 1/2 cup plain greek yogurt
1/2 tsp quality mustard, 1/2 tsp. celery seed, 1 1/2 tsp honey, 1 tsp vinegar
Wisk together ! Pour over your salad that is in the bowl, now toss well being sure it is combined well, then top with roast chicken and Serve ! Healthy and satisfying can truly go together! In one amazing salad bowl!
