INGREDIENTS
2 tbsp Mr Organic Italian Organic Extra Virgin Olive Oil + extra to garnish
1 tin Mr Organic Chickpeas
1 small white onion, finely diced
2 cloves garlic, minced
1 tablespoon fresh sage leaves, finely chopped
150g cavolo nero, thinly shredded, stalks included
400ml vegetable stock
Sea salt
METHOD
1. Heat the Mr Organic Olive Oil in a shallow pan on a medium heat. Add in the white onion and cook down until soft, then add in the minced garlic and chopped sage, and stir them through.
2. Next, add the cavolo nero to the pan and cook it down until it begins to wilt. Add half of the jar of Mr Organic Chickpeas to the pan and add the remaining half a jar to a blender with the vegetable stock, and blend until smooth and creamy.
3. Pour the blended chickpea and vegetable stock into the pan and stir it through, bringing it to a gentle simmer, then season well to taste with sea salt.
4. Serve this Tuscan-Style Chickpea & Cavolo Nero Soup with an extra drizzle of olive oil and some crusty bread on the side – enjoy!
