PLACES I LOVE IN COPENHAGEN Ep.3 Part 1 – Bæst

I don’t really believe in “best pizza lists,” pizza is pizza.
What makes the difference is the ingredients and the care.

But I do believe that the pizza I had the other night at Bæst was indeed one of the best I remember.
Even though “Bæst” means “beast” in danish, There was a motive that repeated itself: delicate flavors, gentleness, and care.
All of the bites were surprisingly flavorful and well balanced.

It’s inspiring to see how this big place operates in such harmony, between local ingredients and the different sections in the space itself
Since it was opened in 2014 by
Christian F. Puglisi and Kim Rossen.

In 2023, Bæst was ranked #2 in Europe and #13 in the world by 50 Top Pizza.
They also recently won Best Italian Wine List in Denmark, along with a Sustainability Prize.

But rankings aside, for me what matters is the humans behind it. and their passion.

So a big thanks to Ariana, the sous chef,
to Gian Marco, the pizzaiolo,
to Riccardo, the sommelier, to Vincent,
to Pietro, the man behind the salumi,
and to all the people who hosted us and showed us around.
