Enjoy this super yummy Sausage Bell Pepper Dish. I have listed the ingredients out in the actual video and below:
*1C Quinoa
*2C Low Sodium Chicken Stock (or stock of your choice)
*2 Bell Peppers (different colors)
*1 White Onion
*3-5 Cloves of Garlic
*EVOO
*1 Can of Low Sodium White Beans (rinsed and drained)
*1LB Hot Italian Chicken Sausage (can be any type of sausage, or meat substitute)
*Plain Goat Cheese (optional)
*1/2 Bunch Italian Parsley
Salt, Pepper, Crushed Red Peppers to Taste
**ALL ORGANIC IF POSSIBLE**
***Can be vegetarian by using meat substitute and vegan by doing the same and omitting goat cheese.
