Prep Time: 20 minutes
Servings: 4–6
Cuisine: Italian-American
Ingredients
For the Salad
• 6 cups chopped romaine lettuce
• 2 cups radicchio, thinly sliced
• 1 cup cherry tomatoes, halved
• 1 cup cucumber, diced
• ½ cup red onion, thinly sliced
• ½ cup pepperoncini peppers, sliced
• ¾ cup black olives or Kalamata olives
• 1 cup mozzarella pearls or cubed fresh mozzarella
• ½ cup provolone cheese, diced
• 100 g salami, sliced into strips
• 100 g capicola or prosciutto, sliced
• ¼ cup fresh parsley, chopped
• ¼ cup fresh basil, torn
For the Herby Red Wine Vinaigrette
• ⅓ cup extra virgin olive oil
• 3 tablespoons red wine vinegar
• 1 teaspoon Dijon mustard
• 1 teaspoon honey
• 1 small garlic clove, finely minced
• 1 teaspoon dried oregano
• ½ teaspoon dried basil
• ½ teaspoon Italian seasoning
• ¼ teaspoon red pepper flakes (optional)
• Salt and freshly ground black pepper, to taste
Instructions
1. Prepare the Dressing: In a small bowl or jar, combine the red wine vinegar, Dijon mustard, honey, and minced garlic. Slowly whisk in the olive oil until the vinaigrette emulsifies. Stir in oregano, basil, Italian seasoning, red pepper flakes, salt, and pepper. Taste and adjust seasoning as needed.
2. Assemble the Salad
In a large salad bowl, combine:
• romaine lettuce
• radicchio
• cherry tomatoes
• cucumber
• red onion
• pepperoncini
• olives
Add the mozzarella, provolone, salami, and capicola.
3. Add Fresh Herbs: Sprinkle in the chopped parsley and fresh basil for added aroma and brightness.
4. Dress the Salad: Drizzle the herby red wine vinaigrette over the salad just before serving. Toss gently to coat all ingredients evenly.
5. Serve: Serve immediately as a main-course salad or a side dish alongside grilled meats, pasta, or crusty bread.
Chef’s Tips
• For extra crunch, add homemade garlic croutons.
• Marinating the red onions in vinegar for 5 minutes softens their bite.
• Substitute chickpeas or white beans for a vegetarian variation.
• Chill the salad ingredients for 10 minutes before serving for a fresher taste.
