FULL PROFESSIONAL RECIPE (Chef Standard)
Ingredients:
• 200g dried pasta
• 2 litres water
• 20g salt (water should taste like the sea)
• Sauce of choice
Method:
1. Bring water to a rolling boil before adding pasta.
2. Add salt once boiling.
3. Add pasta and stir immediately.
4. Cook according to packet time minus 1 minute.
5. Reserve ½ cup pasta water.
6. Transfer pasta directly into sauce.
7. Finish cooking in sauce for 1–2 minutes.
8. Adjust texture using reserved pasta water.
This gives true al dente texture.
