Ingredients
2 pounds russet potatoes, peeled and shredded
1 large egg
1 tsp kosher salt
2 Tbsp olive oil, divided
2 Trident Seafoods® Salmon Burgers
1 cup sour cream
1 Tbsp fresh lemon juice
½ tsp black pepper
½ small red onion, very thinly sliced
2 Tbsp capers
2 Tbsp chopped fresh chives
1 Tbsp fresh dill
Instructions
Preheat oven to 425°F. Squeeze shredded potatoes very dry in a clean kitchen towel. Transfer to a bowl and mix with egg and kosher salt until fully combined.
Brush a parchment-lined sheet pan with 1 Tbsp olive oil. Press the potato mixture into a 10–12 inch round about ½ inch thick. Drizzle with remaining 1 Tbsp olive oil and bake 25–30 minutes, until deeply golden and crisp.
While the crust bakes, cook the Trident Seafoods® Salmon Burgers according to package directions. Let cool slightly, then break into large flakes.
Stir together sour cream, lemon juice, and black pepper. Spread evenly over the hot latke crust. Top with flaked salmon, red onion, and capers.
Finish with chives and fresh dill. Slice and serve immediately.
