I meannn tinned sardines count as seafood, right? 🤣 I will always love tinned sardines and when you are ballin on a budget, this is what you get 😝🤗
If you’re disturbed by the curdly cottage cheese, don’t be afraid lol it cooks down in heat, just add it sooner!
Ingredients (1-2 servings)
2 cups cherry tomatoes
1/2 shallot, chopped
4 garlic cloves, chopped
1/4 cup white wine
1/2 tsp seasoning (salt, garlic & onion powder)
1/4 tsp pepper
4-5 pasta nests (or pasta of choice)
~3 cups broth
1 cup cottage cheese
2 cups spinach
1 tin sardines
Parmesan
Lemon
Calabrian pepper
1. In a pan with oil on medium heat, saute the shallot, garlic & tomatoes for 30s. Cover for 5 min.
2. Smash the tomatoes once softened and add wine. Let it reduce. Add the pasta and 2 cups of broth (you may need to add more broth if not enough). Cover until pasta is mostly cooked.
3. Mix in the sardines, spinach, cottage cheese & Calabrian peppers.
4. Drizzle with lemon and Parmesan. Enjoy!

Throw that nasty table salt out. Use sea or kosher and NEVER pour it from the box. Emotional damage.
