Lobster pasta ๐
Ingredients
โข 80 g pasta (about 3 oz, any shape you like)
โข 200 g lobster meat (about 4 small lobster tails), chopped into bite-size pieces
โข 80 g mushrooms, sliced
โข 1 small shallot, finely diced
โข 2 cloves garlic, minced
โข 1โ1ยฝ tbsp butter
โข ยผ cup heavy cream
โข ~ยผ cup freshly grated Parmesan cheese
โข Pasta water, as needed
โข Chives, finely chopped (for garnish)
Seasonings
โข For lobster:
โข Salt, to taste
โข Black pepper, to taste
โข Smoked paprika, to taste
โข For sauce:
โข Italian seasoning, to taste
โข Salt, to taste
โข Black pepper, to taste

Instructions
1. Cook the pasta
Bring a pot of well-salted water to a boil. Cook pasta until al dente. Reserve some pasta water before draining.
2. Season and cook the lobster
Season lobster meat with salt, pepper, and smoked paprika.
Heat a pan over medium heat and cook the lobster until just cooked through. Remove from the pan and set aside.
3. Build the sauce base
In the same pan, add the butter. Once melted, add the mushrooms and shallots. Sautรฉ until softened and lightly golden.
Add the garlic and sautรฉ for about 30 seconds, until fragrant.
4. Make it creamy
Pour in the heavy cream and stir. Season with Italian seasoning, salt, and pepper. Let it gently simmer for a minute.
Add a splash of pasta water to loosen the sauce if needed.
5. Combine
Add the cooked pasta to the pan and toss to coat in the sauce.
Turn off the heat, then stir in the Parmesan cheese until melted and creamy.
6. Finish with lobster
Add the cooked lobster back into the pan and gently toss everything together until combined and warmed through.
7. Serve
Plate the pasta, top with chopped chives, and serve immediately.
