Wood Fired Lasagna

This was so easy and so delicious. One of my favorite dishes in the world!

Ingredients

Savory Meat Sauce
• 2 tbsp olive oil
• 1 lb ground beef
• 1 lb Italian sausage
• 1 small onion, finely chopped
• 3 cloves garlic, minced
• 1 can (28 oz) crushed tomatoes
• 1 tbsp tomato paste
• 1 can (15 oz) tomato sauce
• 1/2 cup red wine (optional but highly encouraged)
• 1 tsp sugar
• 1 tsp dried oregano
• 1 tsp dried basil
• 1/2 tsp red pepper flakes (optional)
• Salt & black pepper to taste

Ricotta Mixture
• 1 container (15 oz) ricotta cheese
• 1/2 cup grated Parmesan
• 1 large egg
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/2 tsp nutmeg (optional)

Build & Finish
• 12 lasagna noodles (pre-cooked or oven-ready)
• 2 cups shredded mozzarella
• 1/2 cup grated Parmesan (topping)
• Fresh basil (garnish)

Instructions

1️⃣ Fire Up the Yoder
• Run the wood-fired oven at 400–425°F
• Let the fire burn down to glowing embers—you want heat, not flames licking your lasagna.

2️⃣ Meat Sauce That Means Business
1. Heat olive oil in a cast-iron skillet.
2. Brown ground beef + Italian sausage. Drain excess fat.
3. Add onion and garlic; cook until soft.
4. Stir in tomato sauce, and tomato paste.
5. Add red wine and reduce slightly.
6. Season with Heath Riles Everyday Rub, Garlic butter and Italian seasoning.
7. Simmer 20–30 minutes until thick, rich, and dangerous.

3️⃣ Ricotta Mix
• Combine ricotta, Parmesan, egg, salt, pepper, and nutmeg.
• Mix smooth and set aside.

4️⃣ Assemble Like a Pro
1. Sauce layer on the bottom of a cast-iron or ceramic dish.
2. Noodles.
3. Ricotta.
4. Mozzarella.
5. Repeat until stacked like a lasagna skyscraper.
6. Finish heavy with mozzarella and Parmesan.

5️⃣ Wood-Fire Bake
1. Cover loosely with foil.
2. Cook 25–30 minutes, rotating every 10 for even heat.
3. Uncover and cook 10–15 minutes more until cheese is blistered and golden.
4. Pull when the edges are bubbling and the top looks illegal.
