🍝 Super simple high protein beef pasta batch cook (high fibre version)

Recipe (4 servings):

🥩 400 g Beef shin or beef brisket
🥕 400 g Carrots, chopped
🥬 300 g Celery, chopped
🧅 300 g Onions, chopped
🍅 800 g Chopped tomatoes
🥄 2 tbsp Tomato paste
🍝 160 g Wholewheat pasta (dry)
🧄 1 tbsp Garlic
🥣 650 g Beef broth
🍷 50 ml Red wine or 2 tbsp Balsamic vinegar
🧂 Salt, pepper, oregano, paprika
🧀 50 g Parmesan
🧀 50 g Cheddar

1. Combine all of the ingredients except the pasta and cheddar in a large baking dish or slow cooker and mix well
2. Cover and cook in a preheated oven at 150°C for around 4 hours
(optional: turn the beef halfway through)
3. Shred or slice the beef, stir through the cooked pasta, top with cheese, return to the oven for 10 minutes, then serve and enjoy

  4. Even a basic level of cookery will make this much much better.

    Sweat the vegetables, caramelise the tomato puree, brown the beef.

    This is lazy.

  6. looks dry sorry……..I think in a lasagne maybe but not with Penne pasta…….at least use the water from the pasta and maybe pappardelle with it
