Every day I get so many emails and comments asking why you can’t locate the music I use or find it using Shazam. I purchase music licenses for almost all the music you hear in my videos. I buy them them from various royalty-free production music sites and most of the time they don’t list the performer because it’s music made only for film productions with an audio watermark throughout the entire track, unless you purchase the single-use license for $50-100 per track. I use a lot of opera so often I’ll reference the opera but I won’t be able to direct you to a recording of that specific performance that you could stream or buy on iTunes or Spotify. Hope that clears things up and thank you for appreciating quality music.

Ive started my sourdough journey last year around the same time of year, feeding my starter for weeks before trying to bake my first bread and being so excited every time it would grow. My first bread was really a brick but the progress was so visible with every bread I made, I learned the techniques which just became natural with time and developed a feeling for the dough, its texture and smell which now indicate me whether it’s risen enough or too much. This journey has taught me so much, I’ve learned consistency, because you have to take care of your starter regularly, I learned to think more ahead because making bread is really about timing and if you have limited time you need to know when to feed your starter so it will have doubled at the right time so you can make the dough… and as you said it’s actually more forgiving than one might think, you learn to focus on what matters and not get too absorbed by everyone else’s advice, you learn to trust your instinct and your senses. It’s just wonderful. So please don’t excuse for talking about it with such enthusiasm, the same happens to me but people who have made the same experience will understand and others might get curious to try 😊 complimenti per il tuo primo pane perché è davvero bellissimo e sembra delizioso! Im obsessed with baking sourdough as well. Takes you back to the slower pace of life, the process. I store mine in the fridge for up to a week without feeding it. Ive seen you can also freeze it. Spread some out onto baking paper and freeze it on the paper. <3

You don’t have fresh mint in Tuscany? Really…. Kylie take some of those spices to your neighbour I bet she’d know where to buy them from…. I think she’d enjoy tasting them… you need to buy black seeds to top the bread … if you plant mint make sure it’s in a contained planter as it goes wild and travels everywhere under the soil…

Dear Kylie, a long time follower here, AND a bakery owner- your bread looks beautiful. And when you speak about it- this is exactly how I feel about baking my own breads and bake goods (although my husband is the main baker for our business). I love toasting the bread, and after a few days, if I have leftovers I am making croutons for salads and soups.

Kylie, thank you for your beautiful videos! As a lactation consultant I wanted to offer some unsolicited advice ;). be careful with how much mint tea you consume. The menthol in mint is potent and can reduce milk supply as can sage and parsley in quantity. Truly enjoy the beauty of your work!

Welcome to the Sourdough world! I just got into this 6 months ago and no one talks this excitedly about bread the way us sourdough bakers do!
Kylie that is great your making your own Sourdough bread! I have been doing homemade sourdough now for years and i learned this tip from a German woman- Since I make Sourdough once every 3 weeks, I never discard anymore after it matured. I just make it real thick put in fridge for 3 weeks then take it out the night before baking feed and in the morning I start the process of folding etc and bake by 7-8pm. Since my sourdough become mature I take straight out of fridge for sourdough waffles, pancakes etc but never discard. It is always in the fridge till I need it. I ruined sourdough starter twice by keeping out discarding feeding etc plus it wastes a lot of flour. I do use bread flour and I use to make those ones now I make sandwich sourdough bread and lasts way longer before getting hard. Hope this helps
