Gulitfree White Sauce Pasta🍝

Ingredients👇🏼

For the Pasta
• 2 cups pasta (about 200–220 g)
• 5–6 cups water (for boiling)
• 1½ teaspoons salt (divided)
• 1 teaspoon olive oil

For the White Sauce
• 1½ cups cauliflower florets (about 150 g)
• ¼ cup cashew nuts (about 30 g)
• ½ cup cottage cheese (100 g)
• ¼–½ cup water (as needed for blending)

For Seasoning & Assembly
• 1 tablespoon butter
• 3–4 garlic cloves, finely chopped
• ½ teaspoon chilli flakes (adjust to taste)
• ½ teaspoon oregano
• 1–2 tablespoons reserved pasta water (if needed)
• 1 teaspoon olive oil (for drizzling)

Instructions

1. Cook the Pasta
1. Bring 5–6 cups of water to a boil.
2. Add 1 teaspoon salt and 1 teaspoon olive oil.
3. Add pasta and cook until al dente (as per package instructions).
4. Reserve 2 tablespoons pasta water, then strain and set aside.

2. Prepare the White Sauce
1. Boil cauliflower and cashews together for 8–10 minutes until very soft.
2. Cool slightly.
3. Blend with cottage cheese, remaining ½ teaspoon salt, and ¼ cup water until smooth and creamy.
4. Add more water if needed to achieve a silky consistency.

3. Assemble
1. Heat butter in a pan on medium flame.
2. Add garlic and sauté until fragrant (about 30 seconds).
3. Add chilli flakes.
4. Pour in the white sauce and cook for 2–3 minutes.
5. If too thick, add reserved pasta water gradually.
6. Add cooked pasta and mix well until coated.
7. Sprinkle oregano and drizzle olive oil before serving.

✨ Tip: For extra flavor, you can add black pepper or a little grated cheese on top before serving.

  1. Tried the healthy sauce ! Adipoli taste! Please try and post healthy wraps ( instead of tortilla wraps , what else could be used as a wrap ) ☺️
