Pecorino Romano is one of the oldest cheeses in the world, with roots going back to Ancient Rome. But today, most of it is no longer made near Rome at all. In this episode, we visit I Buonatavola, one of the very last producers still making Pecorino Romano in Lazio, the cheese’s original territory, to understand how global demand, especially from the United States, reshaped where and how this cheese is made. We explore the differences between Pecorino Romano made in Rome and the versions produced elsewhere, and how exports helped keep this historic producer alive.

Claudia is still here
Claudia reminds me of Audrey tatou
Its so interesting watching this. As someone who grew up poor in nyc. My grandma always used Pecorino Romano because it was more affordable compared to Parmigiano-Reggiano but still had amazing flavor. I wonder how they compare now price wise. Either way awesome cheese and very cool to see it made!
Ciao Claudia! 😊

Lol 2:31 there is a sign "forbidden to eat", that was my temptation as well ahah
Congratulations on new/old collaboration! I'm bit worried that your channel that showcases artisanal practices all over the Europe will be forced into have heavy Italian bias due to corporate pressure.
yeahhhhhhhhb Claudia is back!
“Food grade plastic coating” oh great 😢 more micro plastics in our food
Even with the automation, it looks like hard work!
Then the future of this cheese is gloomy, knowing that theempire of evil – their main marked has bankrupted already… maybe worth to look for some new, civilized people`s market?
Food grade plastic coating….
I do honestly love pecorino cheese!
It’s not so much that I can afford luxury products as that I feel I should get the most enjoyment out of what I need over what I want.
Morph over 600 Million Years 👀🤔

Pecorino Romano is a true monument to Italian culture. My favorite cheese. Wish we could get hold of the more artisanal variety here in Portugal. Keep up the good work Claudia.
Didn't need to start the video to know it'd be Claudia. Superb work, love her dedication and deep research!
what a master class! ❤
My great great grandparents were illegal immigrants from Italy. It doesn't seem like Italians wanna immigrate the US anymore. Gee, I wonder why.
