We grow our olives along the ionian coast of calabria, italy where it’s super windy. Olive trees love the wind because it keeps them healthy and facilitates natural pollination 🌳
In addition, our soil is very fertile and regenerative farmed which helps the olives develop unique flavor profiles which are known as terroir. This part of the process is controlled by nature and we support as best as we can 👨🏻🌾👩🏽🌾
But then there’s the production piece: we only make our premium olive oils using a cold extraction process using a stainless steel mill at very low temperatures. This helps keep antioxidants in tact and preserve the flavor profiles 👅
