I made Pasta with Peas & Tomato Sauce from Robert Funaro’s cookbook “Homemade” (he played hitman Eugene Pontecorvo in the HBO TV series “The Sopranos”), and the result was out of this world.
This is one of Rober’s mum’s recipes, and I gotta say, it tastes unreal. Better than a steak, like he says! If you don’t believe me, try it for yourself, and then let me know.
I made a detailed step by step video, so that the process will be easy for you to follow, and I have some tips on how to make a great pasta, just like an Italian would.
Ingredients x2 people for my version of this recipe:
-1/2 cup extra virgin olive oil
-1/2 medium sized onion
-1 can of 15oz of sweet peas
-1 can of 8oz tomato sauce
-Fresh basil to taste
-2 cloves of fresh garlic
-Salt & pepper to taste
-1/2 cup grated Pecorino Romano
-A little over 1/2 lb of pasta (a little more than half of a bag)
Here’s some of the brands I used for the ingredients:
-The pasta is from Kroger, Ralph’s brand;
-The tomato sauce is from Kirkland, Costco’s brand;
-The canned peas are from Kroger, Ralph’s brand;
-The extra virgin olive oil is from Kirkland, Costco’s brand.
You could use any other brand for pasta, tomato sauce, olive oil etc.
I can suggest some good brands right here:
-Some good pasta brands are Granoro, La Molisana, Rao’s, Barilla Al Bronzo (it’s their bronze cut line). If available at your local store, choose bronze cut pasta, as its porous surface is ideal for grabbing and holding onto the sauce;
-One of the best tomato sauce brands is Mutti, but it can be pretty pricey and hard to find here in the US;
-Quality extra virgin olive oil is generally the one produced by smaller companies, also hard to find in the US. Central Italy produces some of the best olive oil in the boot. Eataly could be a good place to find Italian products, like Mutti.

The Void. Perfect name for the cat lol. Did you get highlights in your hair?
When I cook/heat my sauce (or gravy as some Italians call it), I don't stir it, I fold it over, I also try to avoid making any sauce in a cast-iron type pot/pan/skillet.
