More #comfortfood! I recall having a version of this dish in Greece, and I am sure the Greeks brought it to Sicily, and the Sicilians brought it to America. I have found it at weddings and on the menus of Italian restaurants across America. It is a great dish for a large party and for a buffet table. I like it best hot out of the oven, but it is also good at room temperature. Buon Gusto!

I have made these for many years though I don't see these as especially Greek. Eggplants or aubergines may have been brought to Spain by the Arabs and then to what we now call Italy before they travelled to Greece. Since they came from North Africa they may have come to Sicily before that by the Arabs who were also there as well. Much of what we would regard today as Mediterranean Cuisine came to Italy from Spain from the exploration of the New World as much of Italy especially Southern Italy was part of the Spanish Empire. As such many things such as: tomatoes, peppers, some squashes, corn and even potatoes arrived in Italy well before the rest of Europe. The proximity of Southern Italy to Greece, but more importantly due to parts of the Greek mainland and especially the Islands being part of the Genoese and Venetian Republics for several hundred years. The influence of these two great maritime republics could be felt as far north as the Crimean Peninsula. Italian dialects could be heard spoken in these areas up until the Twentieth Century. So the next time you hear a Greek or anyone else tell you for that matter that almost three thousand years ago the Greeks brought grapes and olives to Italy remind them that they wouldn't be making moussaka if it weren't for the Italians.
