Ingredients
Focaccia:
500 g strong flour or pizza flour
420 ml lukewarm water
10 g fresh yeast
1 tsp sugar or honey
1 tbsp olive oil
10 g salt
Extra olive oil
Olives
Rosemary
For the sandwiches:
Pesto
Mozzarella
Mortadella
Arugula
Balsamic glaze
Preparation:
In a medium bowl, dissolve the yeast in the water and sugar.
In a large bowl, add the yeast mixture, then add the flour, salt, and olive oil.
Mix with a spoon until a soft dough forms. Let it rest for 15 minutes. Perform 3 rounds of stretch-and-folds every 15 minutes. In each round, make 7โ€“8 folds, bringing the dough to the center (as shown in the reel). After the third round, cover the dough with plastic wrap and let it rest for 1 hour. Prepare a non-stick baking pan (you can also line it with baking paper). Add 2โ€“3 tablespoons of olive oil to the pan, gently pour in the dough, give it one round of folds, then flip it over. Let it rise for 1 hour. After rising, grease your fingers and make small dimples in the dough. Drizzle olive oil on top and add olives and rosemary. Bake in a preheated oven at 230ยฐC for 15 minutes, then lower the temperature to 200ยฐC and bake for another 10 minutes. After baking, let it rest for 15 minutes.
Slice and make the sandwiches: spread with pesto, add mozzarella, mortadella, and arugula, then drizzle with balsamic glaze. Enjoy!
