Ingredients (With Measurements)

For Pasta
• Pasta – 1 cup
• Water – as required
• Salt – as per taste

For Vegetables
• Yellow capsicum – 2 tbsp
• Green capsicum – 2 tbsp
• Red capsicum – 2 tbsp
• Mushrooms – 2 tbsp
• Baby corn – 2 tbsp
• Butter – 1 tbsp

For White Sauce
• Butter – 1 tbsp
• Garlic (finely chopped) – 1 tbsp
• Maida (all-purpose flour) – 1 tbsp
• Milk – 1 cup
• Fresh cream – 2–3 tbsp
• Cheese slice – 1
• Chili flakes – 1 tsp
• Oregano – 1 tsp
• Salt – as per taste

For Garnish
• Fresh coriander leaves

Method

Cooking Pasta
1. Boil pasta in water with a little salt until cooked.
2. Drain and set aside for cooling.

Preparing Vegetables
3. Melt 1 tbsp butter in a pan and sauté yellow, green, and red capsicum.
4. Add mushrooms and baby corn. Toss until slightly cooked.
5. Remove vegetables and keep aside.

Making White Sauce
6. In the same pan, melt 1 tbsp butter and sauté finely chopped garlic.
7. Add maida and stir well to form a roux.
8. Gradually add milk, stirring continuously, until smooth. Adjust milk for desired consistency.
9. Add chili flakes, oregano, salt, fresh cream, and a cheese slice. Stir until creamy.

Combining Pasta & Vegetables
10. Add the cooked vegetables back into the white sauce.
11. Add boiled pasta and mix well.
12. Garnish with fresh coriander.
13. Cook together for 4–5 minutes, then serve hot.
