Welcome to a new page of my quiet journal. ❄️
Today, I’m taking you with me through a winter day here in Northern Italy, between the silent hills and the warmth of my kitchen.
Winter is still deep, but there is a special beauty in these cold, quiet days. Join me as I prepare Pizzoccheri, a traditional Alpine pasta made from scratch with buckwheat flour, savoy cabbage, and potatoes — the perfect comfort food to warm up the soul.

I’d love to hear from you in the comments:
Do you see signs of spring where you are yet, or is it still deep winter?
Have you ever tried buckwheat pasta before?
Thank you for being here and sharing these moments of calm with me.
See you in the next quiet moment,
Rudy

Pizzoccheri
Ingredients for the pizzoccheri
400 g buckwheat flour
100 g all-purpose flour
285 g water
Ingredients for the topping
Potatoes, Savoy cabbage, Latteria cheese (at room temperature), butter, Grana Padano DOP, garlic
Coarse sea salt for the cooking water
Mix the buckwheat flour with the all-purpose flour, then add warm water (about 50°C / 120°F). Knead first in the bowl, then on a lightly floured surface until the dough is smooth and elastic. Shape it into a ball, roll it out thin (about 2–3 mm), and cut into strips, then into short ribbons — your pizzoccheri.
Bring a large pot of well-salted water to a boil. Clean and slice the cabbage, peel the potatoes and cut them into evenly sized chunks. Add the potatoes to the boiling water first and cook for a couple of minutes, then add the cabbage. After that, gently add the pizzoccheri, a little at a time, stirring carefully. They cook in about 4 minutes.
Meanwhile, melt the butter in a pan with the garlic (and a few sage leaves if you like) until lightly golden. Drain the pizzoccheri and vegetables well, then layer them in a warm dish with slices of cheese. Pour the hot butter on top, finish with a sprinkle of Grana, cover, and let it rest for a few minutes.
You can bake it if you want, but honestly, it’s best just like this — simple, warm, and beautifully melty. Enjoy 🌿

Thank you for spending this quiet moment with me in the kitchen and on our balcony 🌿
I’m curious: have you ever tried buckwheat pasta before? It has such a unique, earthy flavor that I love in winter! Let me know in the comments below 👇

Hi Rudy! This was such a peaceful vlog😊. Thank you for showing the part where you struggled with the pasta dough in the beginning: it was so refreshing seeing the raw, chaotic yet somehow peaceful part of that vlog in a world of social media where everyone claims to be unrealistically perfect. And that pasta looks absolutely delicious. Will definitely try the recipe. Much Love💗
So adorable! I’m in love with your channel. This is my happy place, a cup of coffee and your videos. Thank you so much ❤
I love how you focus on very little things❤
love your channel Rudy! ✨🥰
Hi, Rudy!
Our spring isn't coming anytime soon.
There's a lot of snow here, and it's -20 degrees outside.
Inna, Belarus.
Hi Rudy. I never tried buckwheat pasta, the advantage of pasta is that it's always delicious.😊 My mom has made progress with strawberry ,in fact, we now have four instead two🍓The surrounding area is still dry we don't have much water around here, but nature is wise.Greetings to you and Mrs.Z from 🇲🇽😊
It will be another 2 months before I see anything green, so I truly enjoy what you share with us here. Thank you. 🙂
Video dall'inizio molto poetico..
Da un buon esempio nel camminare in Natura .
Grazie per la ricetta dei pizzoccheri.. non facili da trovare nelle Marche.
Grazie❤
Надо же.. у меня точно такие же часы 🕐, даже цвет) , только на фоне оливки…
Ну и зима у вас! 🙃😊
У нас вот снег пять месяцев лежит! ❄🙆♀️
New subscriber here, love your channel! Love your garden and nature scenes, very relaxing. Here in the SF Bay Area, spring plants seem to be waking up. Looking forward to warmer days.
Every moment whispers to my soul 🤍. Sending tranquil vibes from The Pixie Tales 🧚
peaceful moments .. in slow living.. beautiful silent nature… !!!
I'll be starting my balcony garden this year (we just moved in to our new-to-us small flat in France). I'd love to grow some of your calendulas!
Hello from Ontario Canada. Thank you for sharing your life with us, it brings me so much calm, and reminds me that simplicity is peaceful. We are at -25C here with almost 2feet of snow, so plants and flowers are a little far off just yet. I love being inspired by your life. Thank you!
