Italian here. I don't know. I would not eat it but you said that it is not the original Carbonara so approved. We don't want to stop you from doing your experiments. Just say to your subscribers that it's not the real recipe and you are good to go
I prefer the real thing, but much more often I do the simplified, less fancy version. You ”always” have bacon, egg and some parmegiano reggiano (parmesan) in the fridge. Mix an egg and the cheese, and fry up bacon with added black pepper and put aside (to cool off). Once pasta cooked save some pasta water. Mix pasta and bacon, add some pasta water and the egg. If its to hot you get scrambled eggs, so add the water to make sure its not cooking and when you stir it the eggs will emulsify with the water and you get the best carbonara sauce – given the price and ease of access.

Carbonara can use pork jowl sliced into cubes. Thick cut bacon is a substitute.
