If you are using my sourdough focaccia recipe from the blog, you can halve the dough and bake it off in a small skillet (around 8 to 9 inches) or you could bake off the full recipe in a larger skillet (11 to 13 inches).
Once you have your preferred dough, place it into a well-oiled skillet, using a generous drizzling of olive oil to prevent sticking and to encourage a golden-brown crust. Add a little drizzling of olive oil over top and then sprinkle over a dusting of dried oregano and crushed red pepper flakes. Next, spoon over a few dollops of good marinara and spread over top evenly with a spoon. Then stud in thickly sliced red onions and a big handful of halved olives (your favorite variety!). Sprinkle with a touch of flaky salt and bake in a pre-heated 450°F oven for about 15 minutes to 25 minutes, rotating halfway through, until golden brown. If the toppings are beginning to brown too much, you can reduce the temperature and continue baking until the loaf is done. Once out of the oven, I like to add one final drizzle of olive oil, but that is up to you. Let the loaf cool on a wire rack for 45 minutes and enjoy!
