Creamy Italian Sausage Gnocchi Soup
Ingredients:
• 16 oz Italian sausage
• 1 medium onion, finely chopped
• 3 sticks celery, finely chopped
• 2 tbsp flour
• 6 cloves garlic, minced
• 3 cups chicken broth
• 1 (28 oz) can crushed tomatoes
• 1 tbsp Italian seasoning
• 1 lb potato gnocchi
• 3 cups heavy/whipping cream
• 3 cups fresh baby spinach
• Salt & pepper, to taste
• Fresh Parmesan cheese, for topping
• Garlic bread, for serving
Directions:
1. Brown sausage in a large pot or deep skillet. Remove and drain.
2. In the same pan, sauté onion and celery until soft.
3. Add garlic and flour; stir for about 30 seconds.
4. Pour in chicken broth, crushed tomatoes, and Italian seasoning. Stir well.
5. Add cooked sausage back to the pot.
6. Stir in heavy cream and bring to a gentle simmer.
7. Add spinach and cook until wilted.
8. Add gnocchi and cook according to package directions.
9. Season with salt and pepper.
