Recipe Number 1: Shakshuka Pasta

1 tbsp Olive Oil
1 Yellow Pepper
1 Red Onion
1 tspn Ground Coriander
1 tspn Paprika
1 tspn Cumin
1 tspn garlic granules
2 tbsp Tomato Puree
1 Tin Chopped Tomatoes
4 Eggs
250g Pasta

Method:
Fill a pot with water and a light sprinkle of salt and bring to a boil on a medium-high heat.

While the water is heating, pop a deep frying pan onto a medium heat and add the olive oil.

Add the onion and peppers and fry, stirring occasionally, until the vegetables are softened. Around 5 minutes.

Add the pasta to the boiling salted water and begin to cook. (We are looking to cook it until al dente, as it will finish cooking in with the sauce!).

Add the cumin, paprika, garlic granules and tomato purée to the frying pan and cook for a few minutes. Then add in the tinned tomatoes and bring to a simmer for around 8 minutes.

Add 125ml of pasta water to the frying pan and stir to combine. Continue to simmer until the pasta is al dente.

Drain the al dente pasta and add it to the frying pan and mix well.

Using a spoon, make 4 indents in the tomato sauce and pasta and gently crack an egg into each indentation. Reduce the heat, pop a lid on, and cook on low until the egg whites are fully cooked.

Uncover and top with a sprinkling of fresh parsley (if you wish). And that is it! Enjoy!
