It's funny that you don't want to overcook the meat ๐ the meat is much better simmered in that sauce for a couple of hours, also simmering it for a long time on a slow flame helps with the tomato acidity (add some carrot into your sauce in case of very sour tomatoes) and the best argument for low and slow cooking is that the flavour of the sauce just can't be beat compared to a quick tomato sauce made in 30 minutes. Also some pork belly at the beginning is great instead of oil (if you have it on hand of course).
Nice recipe! And I totally agree with your dad – it is necessary to add sugar to the tomato sauce. It was my nanny who cooked it sweet. Think it was Filipino style with banana sauce. Ever since I tried that version, my spaghetti must be sweet to taste normal. Lol.
My grandma makes the sauce the same way but without meat I've been thinking about adding meat to mine because I have an autistic son and one of the only things he eats is spaghetti but I'm scared he won't like the change
actually, I do this. I use ground beef instead and fish sauce to get the umami flavor. I use fish sauce, To the ground beef and use garlic and regular croutons, ground pepper with one egg and mix all together.

This is how my family makes it too. Just with beef instead of pork. Spaghetti and meat blobs
