One of my husband’s favorite dinners is nachos, here is how I make the cheese sauce. Ingredients • 2 tbsp butter • 2 tbsp flour • 2 cups heavy cream • 8 oz cheddar cheese, grated • 8 oz oaxaca cheese, grated • 4 oz monterey Jack cheese, grated • 1/2 tsp pepper • 1/2 tsp salt • 1 tsp paprika • 1/2 tsp cumin Instructions Melt the butter over medium heat, then whisk in the flour until fully combined. Slowly add the heavy cream, whisking constantly to prevent any lumps. Heat the mixture just until tiny bubbles begin forming around the edges, then lower the heat to low. Add in the cheeses and stir continuously until fully melted and smooth. Remove from heat and serve warm.
