Spaghetti with Charred Courgettes & Parmesan

Ingredients
– 1 extra large courgette
– 3 cloves garlic
– 20g butter
– 20g basil
– 30g parmesan
– Glug of white wine
– 1/2 lemon zest
– 200g spaghetti
Finely slice the courgettes and dice the garlic. Take a pan on a high heat with a good amount of olive oil, add the courgette and fry for around 5 minutes until golden brown. Turn down the heat slightly and add garlic and cook for two minutes.
Add the wine and cook for one more minute. Cook the pasta in salted boiling water for around eight minutes until al dente
Add the cooked pasta to the courgettes with a glug of pasta water, the grated Parmesan, the butter and the lemon zest. Toss through until fully coated.
Tossed through the diced basil. Finish with lots of cracked black pepper and an extra pinch of salt.
Serve with extra Parmesan and enjoy .
