#69 Melanzane a Barchetta (Calabria Ionica)

Melanzane a Barchetta is one of those dishes that stays with you long after the plate is empty. I first tasted it on the Ionian coast in a tiny trattoria with no menu, just home cooking. Eggplant, tuna, breadcrumbs and pecorino donโ€™t sound special, but together they become something deeply Calabrian, where hills and sea can meet. As they baked, the house filled with tomato and basil, and I understood why this dish never needed a story. Itโ€™s simple, honest, and shaped by the place that created it.

You can find the full story with recipe, method and tips on my Substack. (Link in bio)
