Despite the sounds and you testing the crisp, I'm pretty sure it'd be more crispy without using the lid. Or the lid with water. That basically softens it and reduces the crisp. Is the lid technique really necessary? I do a very similar technique – been making grilled cheese for 25 years – but I don't use the lid, and the crisp is out of this world. Doesn't the lid, which is kinda like steaming it, reduce that crisp a bit? For me, it's all about the crisp. I'm suspicous of trying your technique. But I'll try it. Thanks for sharing your technique for grilled cheese.

Yeah… I think I’ll stick with can soup and a quick grilled cheese on the skillet. I’m not taking that long for grilled cheese and soup.
